Ingredients:
2 bell peppers, deseeded and cut into triangles
800 g firm tofu, drained, pat-dried and torn into bite-sized chunks
Olive oil
1 tb maple syrup
1 tb + 1 tsp fajita seasoning mix
5 tb nutritional yeast
Salt to taste
To serve:
Tortillas
Shredded lettuce
Diced tomato
Vegan sour cream
Instructions:
1. Preheat the oven to 180°C.
2. Toss the bell peppers with a drizzle of olive oil and spread them onto one side of a parchment-lined baking tray.
3. In a bowl, coat the tofu with olive oil, maple syrup, fajita seasoning, nutritional yeast, and salt. Spread the tofu on the other side of the baking tray.
4. Bake until the tofu is golden and the peppers are tender and lightly charred.
5. Warm the tortillas, then fill with the tofu, peppers, lettuce, tomato, and a generous spoonful of the sour cream. Fold the bottom over the filling, tuck in the sides, and roll up tightly. Serve immediately.
